WALNUT MEAT TACOS WITH LIME SOUR CREAM

Ingredients

Tacos

  • 1.5 cup de-shelled walnuts
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 tbsp soy sauce
  • 6 flour tortillas

Toppings

  • sliced avocado
  • diced tomatoes
  • cole slaw cabbage
  • chopped cilantro
  • cojita cheese

Lime Sour Cream

  • 8 oz sour cream
  • 1/4 cup water (more if needed)
  • 1 tbsp lime juice
  • salt to taste

Instructions

  1. Add walnuts and seasonings to a food processor and process until mixture is kind of “meaty”.

  2. Put the sour cream ingredients into a small bowl and use a fork to combine. Add more lime juice and water to achieve the consistency you want. Slowly add the salt to balance the bitterness of the lime.

  3. Place a small spoonful of the cream and wipe it through the center of the shell. Fill taco shells with walnut mixture and top with toppings of choice. Drizzle a small amount of the cream and finish with cojita.
